According to Sunnecko, the blade of their 12” carving knife is forged from 1.4116 stainless steel; specifically, 1.4116 steel is produced in Germany, although there are Chinese and Japanese variants with exactly the same properties. As the seller notes, 1.4116 stainless steel is a high carbon martensitic (a specific type of steel structure formed through a rapid cooling process known as quenching) stainless steel with excellent corrosion and wear resistance properties. It’s a fairly hard steel commonly used in the manufacture of knife blades. It has decent edge retention, overall toughness and is easy to sharpen. That said, the easier a blade is to sharpen, the more often it’ll need it, as edge retention is a function of a blades hardness as measured on the Rockwell HRC scale. 1.4116 steel has an HRC rating of 54 – 57 HRC, ranking it the lower end of steel hardness.

The handle of the carving knife, made from Pakkawood, is an ultra-durable, engineered wood/resin composite that’s very dense and more water resistant than real wood. As such, it’s frequently used in the fabrication of knife handles due to its resiliency during the course of daily wear and tear; pakkawood is used for the handles of many high-end kitchen knives. It’s formed by impregnating a selection of hardwood veneers with phenolic thermoset resins, then subjecting them to extreme heat and pressure. With proper care, it can last decades.

As the seller notes, rather than the wavy pattern on the blade being formed by Damascus forging, it’s a laser etched design. That being the case, the patterns are far more subtle than a Damascus blade; depending on the relation of the blade to the direction of light illuminating it, they will sometimes appear highly visible, while at other times practically disappear. It provides a softer visual effect than that of a Damascus blade.

The blade of the Sunnecko carving knife is quite thin, a characteristic that allows it to glide through the various foodstuffs used in kitchen preparations; the knife is especially effective at cutting thin, even slices through both meat and vegetables. The knife is delivered in a highly sharpened state; given its length, it would be advisable to remain focused while using it. According to the care instructions supplied with the knife, if used on a regular basis it should be honed once per week, or twice a year, if that’s how many times it’s used. In any case, it should be sharpened when needed. According to the KnifeBasics website, 1.4116 blades are readily sharpened to a razor-sharp edge with simple sharpening tools and basic sharpening skills.

By all accounts, including my personal experience, Sunnecko’s 12” Carving Knife is manufactured using a high standard of materials and design. It should prove to be durable even with daily use, while incorporating an attractive marriage of form and function. Moreover, it’s 1.4116 steel blade makes it convenient to keep sharp, making it an ideal knife for both the novice and professional user. Given its price point and the apparent quality of the materials used, it seems competitively priced. Personally, I’m quite pleased with it.
